Country-Style Open-Face Sandwich
Ingredients
1 slice of whole wheat bread
1 slice of ham, cut into strips
2 tablespoons canned mushroom pieces
White sauce
Grated
Cheddar cheese

Preparation
Toast slice of bread; cool.
Mix ham strips and mushroom pieces into white sauce.
Spread white sauce over slice of bread; sprinkle with grated cheese.
Broil until golden brown.

White Sauce
3/4 pint Milk
1-2oz Butter
1oz Plain Flour
Salt and Pepper
Mix the flour with melted butter in a saucepan.
Cook gently for 1 minute.
Gradually add the milk a little at a time, whilst whisking, to produce a smooth sauce.
Cover and simmer for 15-20 minutes, stirring from time to time, to cook the flour thoroughly.

Note: This sauce can be used as a basis for a wide number of other sauces, by adding other ingredients such as herbs or other flavoring.
