Apple Spice Muffins |

Ingredients:
2 cups flour
1/2 cup sugar
1 1/2 teaspoons baking soda
2 eggs
1 cup vanilla yogurt
1/4 cup butter, melted and cooled
2 teaspoons cinnamon
1 cup apples, peeled and chopped
Directions:
Sift together flour, sugar, baking soda and cinnamon. In another bowl, blend eggs, yogurt and butter. Pour egg mixture into flour mixture, add apples and stir. Bake at 375ºF in greased muffin tins for 20-25 minutes.

Its really nice to start the day with something warm out of the oven. But most of us are a little short on time, at least on regular school days. This recipe is something that can be made in advance and kept frozen. Then, just pop a few out of the freezer as needed.
Tasty muffins combine apple, yogurt and some spicy cinnamon for extra flavor. Try putting a little peanut butter on your muffin for some extra protein and healthy fat. Have a piece of fruit and a glass of low-fat or fat-free milk on the side, and youve got a well-balanced and delicious breakfast. And, if there are any left over, they make a great after school snack too.
