Banilla Blueberry Bread
Ingredients:
1 1/3 cup plus 1 teaspoon all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
2 tablespoons butter, room temperature
1/2 cup sugar
2 eggs
1 cup lowfat vanilla yogurt
1 small banana, peeled, mashed
1/2 cup frozen blueberries

Directions:
Preheat the oven to 350°F and grease loaf pan. Combine all dry ingredients, and mix well. In a separate large bowl, combine butter and sugar and beat on high for 2 minutes. Gradually incorporate mixture of dry ingredients, followed by the yogurt, eggs and mashed banana. In a small bowl toss frozen blueberries with flour to coat, and gently fold into the batter. Pour batter into greased loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let cool on a baking rack before removing pan.
